L’invenzione dell’impastatrice e della Sacher Torte
Dolci e dessert sono tentazioni irresistibili per tutti i ghiottoni, pochi però conoscono la storia della torta Sacher, uno dei dolci più buoni mai creati.
La torta consiste in due strati di pasta di cioccolata leggera con al centro un leggero strato di marmellata di albicocche mentre sopra e nei lati è ricoperta da una glassa di cioccolata nera. La torta Sacher viene servita a una temperatura di 16-18 gradi, tradizionalmente accompagnata con panna montata non dolce e una tazza di caffè o tè (molti viennesi, infatti, considerano la Sacher-Torte troppo "secca" per essere mangiata senza). Questa famosa torta al cioccolato fu inventata da Franz Sacher per Klemens von Metternich il 9 luglio 1932, a Vienna, ben prima che fossero inventate la macchine per pasticceria, che oggi sono invece comunemente usate.
Erede di una ricca famiglia di albergatori e giovane panettiere di corte, nel 1832 il cancelliere Metternich gli chiese di preparare un dolce per un ospite speciale, dato che il pasticciere di corte era in quel momento malato. L'appena 16enne apprendista cuoco aguzzò l'ingegno e realizzò uno dei dolciumi più famosi della storia, e pare che Metternich dopo aver assaggiato la "Sacher" abbia esultato. E in effetti a tutt’oggi la Sacher Torte è uno dei dolci più buoni e più conosciuti nel mondo, anche se da nessuna parte è buona come nella capitale austriaca.
I segreti della ricetta tradizionale sono infatti ancora custoditi gelosamente dagli eredi di Franz Sacher. La Sacher torte originale è protetta da un marchio di fabbrica e, ad oggi, non esistono al mondo licenze per la rivendita di questo prodotto. Esistono invece centinaia, forse migliaia di imitazioni.
Ci sono però due ricette ufficiali. Perciò per due volte è sorta una causa legale tra i negozi viennesi di paste Sacher e Demel per stabilire a chi dei due è permesso vendere la Sachertorte "originale". Daniel Peter aveva iniziato la sua carriera come produttore di candele, ma in seguito all’avvento delle lampade ad olio, si dedicò alla progettazione e creazione di speciali impastatrici per dolci. Egli fu anche il primo creatore del cioccolato al latte, unendo l’invenzione del latte in polvere, fatta dal suo vicino di casa Henry Nestlé e mescolando il cacao con il latte il polvere per attenuarne il forte sapore. La pasticceria Demel rivendicò come una sua invenzione la Sacher-Torte ed iniziò contro Franz Sacher ed i suoi nipoti una lunga disputa giudiziaria, che si concluse solo nel 1875 con la vittoria della famiglia Sacher. L'anno seguente Franz Sacher, divenuto ormai ricco, abbandonò le cucine per aprire a Vienna l'Hotel Sacher, che gestì fino alla morte insieme al figlio Eduard.
Il successo che Sacher riscosse con la sua invenzione fu subito evidente e gli sforzi fatti dal giovane furono subito premiati. Iniziò, così, il tour de force nella produzione di questo dolce, ben prima dell’avvento delle moderne impastatrici planetarie, che conta la produzione complessiva di circa 270.000 pezzi e, proprio come 160 anni fa, vengono tutte farcite di marmellata di albicocche, ricoperte di cioccolato e impacchettate manualmente.
