Sui Authentic
Sui Mai consistency...having a problem...?
I have made Sui Mai and other Chinese dim sum for the steamer many times over the years, I have tried numerous recipes from websites, cookbooks, all were from very authentic sources. My issue is not with the flavor but with the consistency. Mine are a little dry, and the texture is almost crumbly . I am looking for the solid texture you would find at a Chinese restaurant, if you bite into it there is no separation of the interior, I am referring to pork or chicken sui mai. Is there a secret ingredient I am not finding in my cookbooks? Should I be processing longer in the Cuisinart?
You need to add some ground pork, ground chicken or ground shrimp, and FLOUR (all purpose flour), will hold the texture together.
