Sparkling Cider
What happens if you mix jello with a sparkling beverage like cider or soda?
it won't explode before, during, or after the digestive process, right? 
fizzing before for presentation is fine, thanks!
after it's been made... not during 
got a sweet champagne jelly recipe we use an a pre-dessert amuse sometimes in my restaurant....im sure it would give the same effect with cider/soda:
500ml pink chamapgne (or sparkking liquid)
200ml fresh fruit juice (any flavour, raspberry works good)
600g sugar
8 1/2 leaves gelatine
bring the fruit juice and sugar up to the boil, simmer until sugar dissolves. soak the gelatine leaves in cold water for 5 mins , then squeeze out any excess liquid. stir the gelatine into the fruit juice, the put in the fridge to chill, stirring every 10 mins or so. just before its on the point of setting, tip in all the sparkling stuff, pour into glasses (think martini glasses/champagne flutes/shot glasses) the bang in the FREEZER until set. done.
the idea of letting the gelatine set first means that after adding the champagne, the finished jelly will set while theres still bubbles floating up through it, rather than going flat.
if you really wanna show off....take a little bit of champagne and put in a blender with a sprinkling of soya lecthithin (health food shops).....blend until foamy, and scoop the foam on top of your bubbly jellys, giving them the "head" normally associated with the real drink.
