wedding cake using almond and royal icing?
Hi just a question for my mum, she is making my friends wedding cake. She is really good at making fruitcake and decorating it with her almond and royal icing with the added extras. Though my friend has given her a challenge to make her wedding cake half fruitcake and half chocolate cake. She is ok with icing the fruitcake bit, though she finds that is to hard to ice the chocolate cake with the royal icing. Any help or ideas would be greatly appreciated- thankyou
For the chocolate cake, she should try applying a "crumb coat" (a very light coat of icing that will prevent the edges from crumbling while the royal is being applied) in a different icing (such as a thick butter cream), and then the royal icing.
