A Professional Chocolate souffle recipe PLEASE!?
i want to make a chocolate orange souffle for my GCSE food to show skill, but i can't be sure about internet recipes, so ANY PROFESSIONAL CHEFS, can u give me a recipe.
I need to have fruit in it so i chose orange. Help.
on the internet, some say use creme patisserie, others don't; others say use egg yolks, others don't.
What recipe will give me a GREAT fluffy inflated souffle
Dark Chocolate Orange Soufflé with White Chocolate Chunk Whipped Cream
For the souffle:
* 1/4 cup whipping cream
* 4 ounces bittersweet (not unsweetened) or semisweet chocolate, coarsely chopped
* 2 egg yolks
* 1 tablespoon Cointreau or other orange liquer
* 1 teaspoon grated orange peel
* Sugar
* 3 egg whites, room temperature
* Pinch of cream of tartar
* 2 tablespoons sugar
* Powdered sugar

For the whipped cream:
* 1 ounce imported white chocolate
* 1/2 cup chilled whipping cream
* 1 tablespoon sugar
* 1/2 teaspoon grated orange peel
* 1 tablespoon Cointreau or other orange liquer
Preparation
To make the souffle:
Cook cream and chocolate in heavy small saucepan over low heat, stirring until chocolate melts and mixture is smooth. Remove from heat and beat in yolks 1 at a time. Mix in Cointreau and orange peel. Cook to tepid. (Can be prepared 2 hours ahead. Cover and let stand at room temperature. Stir over low heat until tepid before continuing.)
Preheat oven to 375°F. Butter one 4-cup or two 1 3/4-cup soufflé dishes; dust with sugar. Beat whites and cream of tartar in medium bowl until soft peaks form. Beat in 2 tablespoons sugar. Fold 1/4 of whites into chocolate. Gently fold in remaining whites. Spoon into prepared dishes. (Can be prepared 1 hour ahead. Cover and let stand in draft-free areas at room temperature.) Bake until soufflé rises but still moves in center when touched, about 20 minutes for individuals and 30 minutes for one large. Dust tops with powdered sugar. Serve immediately, passing whipped cream separately.
Cut chocolate into 1/4-inch dice. Combine cream, sugar and orange peel in medium bowl and beat until stiff peaks form. Mix in Cointreau. Fold in chocolate. (Can be prepared 4 hours ahead. Cover and refrigerate.)

Chocolate Orange Souffle Dark plain chocolate is the best kind to use for mouthwatering desserts like this one, which call for a good depth of flavour. Cold souffles and mousses, concocted from whipped cream and egg whites, have been popular puddings since the 17 th century.
ingredients
serves 6 - 8
450 ml (3/4 pint) fresh milk
175 g (6 oz) plain chocolate
3 eggs, separated, plus 1 egg white
75 g (3 oz) sugar
15 ml (1 tbsp) gelatine
grated rind and juice of 1 orange
300 ml (10 fl oz) fresh whipping cream
15 ml (1 tbsp) chocolate liqueur
method
1. Line a 900 ml (1 1/2 pint) souffle dish with greaseproof paper to make a collar.
2. Put the milk in a saucepan and break 150 g (5 oz) chocolate into it. Heat gently until the chocolate melts, then cook over a high heat until almost boiling.
3. Whisk the egg yolks and sugar together until pale and thick. Gradually pour on the chocolate milk, stirring. Return to the saucepan and cook, stirring continuously, until it coats the back of a wooden spoon. This takes about 20 minutes. Do not boil.
4. Sprinkle the gelatine in 45 ml (3 tbsp) water in a small bowl and leave to soak. Place the bowl over a saucepan of simmering water and stir until dissolved. Stir into the custard with the orange rind and juice. Cool.
5. Whip the cream until it just holds its shape, then fold most of the cream into the cold mixture. Whisk the egg whites until stiff and fold into the mixture.
6. Pour the mixture into the prepared dish and leave to set. Remove paper collar.
7. Stir the liqueur into the remaining cream and use to decorate the souffle. Grate the remaining chocolate and sprinkle on top.
